Keto Italian Wedding Soup


Long before diving into Keto, I enjoyed cooking big for my family. One of my girls recently asked if I knew of a Keto version of Italian Wedding Soup. (This soup is a favorite among my kids, but definitely not a Keto recipe.) I found a recipe online, but decided to tinker with my recipe and see if it would turn out. It wasn't bad! In fact, it was really, really good!


Keto Italian Wedding Soup

2 tbsp Avocado Oil

4 medium Celery stalks, diced

1/4 cup Onion, diced

3 tsp Minced Garlic

1 tsp Redmond Real Salt

1/4 tsp Ground Black Pepper

12 cups Chicken Broth

1 lb Armour Original Meatballs

12 oz Riced Cauliflower

10 oz Baby Spinach

Garnish: Fresh Parmesan Cheese

In a large pot, heat avocado oil over medium heat. Add celery, onion, garlic, salt and pepper, stirring and cooking until onion is clear. Stir in 12 cups chicken broth. Cover, simmer 10 minutes. Bring to a boil and add meatballs and riced cauliflower, simmer 10 minus. Stir in spinach, serve immediately. Garnish with parmesan.
